Zesty lemon roast chicken 'n chips

Make washing up easy with this simple one-pan dish.


  • 2 chicken Marylands with skin on

  • 3 large potatoes washed and peeled

  • Three sprigs of rosemary leaves

  • Two whole garlic cloves in their shells

  • Two small lemons

  • Olive oil

  • Salt & pepper


  1. Preheat the oven to 180 C

  2. Wash, peel and chop the potatoes into chips

  3. Cut the lemons in half (if lemons are large cut into quarters)

  4. Add whole garlic in shell, potato chips, chicken, rosemary sprigs and lemon into shallow oven-proof pan

  5. Season with salt and pepper

  6. Toss and coat all ingredients in 1 to 2 tablespoons of olive oil

  7. Bake for 25-30 minutes then turn all ingredients over

  8. Cook for a further 25-30 minutes until golden and cooked through
